With Pi Day Pie Offering, Double Trellis Food Initiative Showcases the Level of Food They Make Every Week

Nothing says love like a fresh baked pie during the holidays or simply at a dinner party with friends. Sure, you can pick up a decent pie at your local supermarket last minute, but those usually aren’t the ones that people are talking about 3-5 years later.

As with the pies on offer for Pi Day, Double Trellis Food Initiative looks to provide the community with a memorable experience on a weekly basis through ingredient driven, from-scratch cooking. Run by two chefs with a long history in fine dining in Philadelphia, the pies they will be selling for a fundraiser will showcase the creativity they put into every meal–they do 1,200 meals per week, all placed in community fridges around the city–as well as Double Trellis’ next level sourcing.

For instance, Director of Programs/Kitchen Manager and Pastry Chef Adrien Carnecchia speaks of their love for Three Springs Fruit Farm‘s apples and peaches from their time at places like Talula’s Garden and Hungry Pigeon (DTFI was founded by Chef Matthew Stebbins in 2020; Carnecchia joined in 2023).

Three Springs Fruit Farm’s apples will be used for a ginger 5-spice apple pie with crumble inspired by one of their daily meal selections: a ginger 5-spice chicken with cabbage and carrots. The chickens they use for any meal come from Carversville Farm Foundation, a non-profit outside of New Hope. They raise organic, grass-fed chicken, cows, and turkeys, and also supply The People’s Kitchen in South Philly.

The second option: a toasted sesame and honey pie using Japanese toasted sesame paste and honey similar to a pecan pie filling that’s “more complicated and nuanced in flavor.” This one is a riff on a pie Carnecchia did for Pi Day in 2017 at the now shuttered Day By Day in Rittenhouse that operated for 40 years. The third offering is a chocolate brownie pie with a miso caramel and chocolate blended with fresh orange juice and orange zest, and a buckwheat flour crust.
